Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Previously frozen sandwiches were thawing at room temperature. PIC stated they had been taken out about an hour prior. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Discussed having employees thaw sandwiches the night prior in the refrigerator. The owner is experiencing challenges with staff turnover and maintaining certified staff. Food safety knowledge was sufficient at the time of inspection. Observed hand sink near ice machine and 3-compartment sink out of working order. Discussed with staff the importance of having this hand sink working and accessible due to its proximity to the sink and ice machine. There is another hand sink 15 feet past this hand sink. Spoke with owner on the phone.
