Inspector's notes
Employee donned blue gloves, handled raw hamburgers, then removed blue gloves, contaminating hands with improper removal of blue gloves, then continued with task of handling ready to eat buns. Manager instructed employee to wash hands and don new gloves to continue with tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

At in use 3-compartment sink, employee washed and rinsed dishware, then sanitized dishware in quat sanitizer <5 seconds. Manager instructed employee to re-sanitize dishware for approved time frame. Signage above 3-compartment sink states dishware is to remain in sanitizer solution minimum 60 seconds. Food-contact surfaces sanitized using quaternary ammonia are to be sanitized with a contact time according to manufacturers specifications. Corrective Action: Corrected at time of inspection.

Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Provide hot water under pressure to the sink as needed.
