At in use 3-compartment sink, no detectable quat sanitizer on dishware surfaces. After empty sanitizer bag was exchanged for full bag and dispenser was primed, quat sanitizer was being dispensed at proper concentration of 150-400ppm. Discussed more frequent monitoring of sanitizer solution, especially at start of day and after periods of heavy warewashing or periods of inactivity. Corrective Action: Corrected at time of inspection.

The person in charge unclogged the dispenser line and restored 200ppm quaternary ammonium. Wares on the drainboard were returned for re-sanitizing. Correct By: Corrected At Time Of Inspection
