The bag was replaced and the buckets were refilled with 150ppm concentration. This establishment uses the dishmachine for sanitizing and the dishmachine was dispensing 100ppm chlorine concentration. Observed cooked chicken holding 120-129F in the "to go" orders hot holding table. PIC stated that it was just taken off the grill recently.
