Inspector's notes

Observed whipped cream holding 53F on the counter. PIC stated that the whipped cream had been filled yesterday at 4pm and taken out of refrigeration for use around 8am. The whipped cream was discarded. Discussed temperature requirements for cold holding, or using 4 hour time as a control to monitor and verify temperatures. TCS food items must be stored at 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
