Also observed a package dated 5/5 and another dated 5/12. It is unclear if the procedure is to mark the expiration or start date of TCS foods. PIC will determine the preparation date of the two undated bags of chili beef and will determine the start date of the dated chili beef. Date marking is the mechanism by which the Food Code requires active managerial control of the temperature and time combinations for cold holding. Industry must implement a system of identifying the date or day by which the food must be consumed, sold, or discarded. PIC will retrain employees to use the same date marking procedure.
