Observed sanitizer bucket with concentration of quaternary ammonia at 0ppm. PIC reported standard procedure is to change every four hours. Discussed water temperature and chemical dissipation. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC instructed staff to remake sanitizer buckets with proper concentration of sanitizer. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cut tomatoes, diced tomatoes, assorted cheese (cheddar, provolone, feta), raw shelled eggs and pooled eggs; measured 48-54'F in tabletop prep-cooler located closest to hot well. Ambient temperature of unit in question measured 58.8'F. PIC stated unit is emptied at end of day and stocked every morning. Food items in question were prepped or stocked at 7am, less than 4 hours prior, per PIC. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Establishment equipped with adequate coldholding capacities; PIC agreed to not use unit until it has been fixed. PIC put a work order in for unit to be serviced later today, unit was emptied of all TCS food items at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
