Observed damaged boxes of food in walk-in freezer. Boxes were torn on front face of box, causing product (french fries and hamburgers) to be exposed. All foods should be protected during storage. Observed mechanical warewashing machine run several cycles with dirty dishes, and produce a chlorine strength of less than 50ppm. Unit should produce a strength of at 50-100ppm every time for proper sanitation. Person in charge stated a service request has been placed, removed dishes, and placed in 3-compartment sink for manual sanitation. All dishes to be washed and sanitized in 3-compartmnet sink until mechanical warewashing unit can produce a consistent strength of 50-100ppm. Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available and easily accessible. PIC made several attempts to prime the dishwasher, each time, there was 0ppm of chlorine after final rinse. PIC called for service at time of inspection. Advised PIC to use the 3 compartment sink until dishwasher is fixed. Corrective Action: Corrected at time of inspection.

Employee observed grabbing a broom and taking it inside the bathroom, came back to the cook line and switched gloves to get ready to make an order. Inspector advised employee to remove gloves and wash hands before continuing. The employee was observed properly washing hands and they put new clean gloves on before making the order. Per FDA Food Code 2017, food employees must wash their hands after any activity which may result in contamination of the hands. Switching gloves only is not sufficient. Corrective Action: Corrected at time of inspection.

Inspector's notes

Shredded cheese and diced tomatoes observed with internal temperature range of 48-53*F while being cold held in unit by the hot dogs. The ambient temperature of the unit was 49*F according to inspectors' min/max thermometer and also confirmed by the refrigerator thermometer inside the unit. Per PIC, the cheese and tomatoes were stocked roughly an hour prior to this inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrected at time of inspection.
