In the walk in cooler observed several ready to eat (RTE) Temperature/time controlled for safety (TCS) foods past their 7 day date mark. Observed Chilaquiles sauce with cooked onions and tomatoes from 3/31, Green salsa with tomatillos from 4/6, roast beef from a package from 3/21, cooked fajita chicken from 4/4, cooked pasta from 4/1, and cooked meatballs from 4/4. All foods past 7 days were embargoed. Discussed monitoring date marks and removing outdated foods from the walk in cooler more frequently.
