Establishment is able to operate safely for their food service. Inspector will follow up on the repair of the tall reach in coolers. Re-inspection is scheduled for Monday 7/20.

In the 2 upright coolers in the hallway, in the drawer cooler, and in the two low reach in coolers in the kitchen, observed various TCS sauces, raw chicken, raw eggs, cooked chicken, cooked pork shoulder, cut tomatoes, scratch jalapeno jam, cooked noodles, cheese sauce, microgreens, butter, goat cheeses, and cooked noodles all between 49*F and 62*F. All foods in cold holding must remain at or below 41*F. Coolers in use were above 41*F. All foods had been out for less than 4 hours and moved to working coolers.

All temperatures were taken with the inspector's min/max thermometer after 5 minutes inside the cooler. Observed the front, upright cooler holding at 55.3*F. The back, upright cooler was holding at 53.7*F. The drawer cooler was holding at 46.7*F. The middle, low, reach-in cooler was holding at 55.1*F. The side, low, reach-in cooler was at 59.0*F. All coolers were in-use and holding TCS items at time of inspection. All cold holding units used for TCS foods must be kept at or below 41*F during all times of operation.

No County legal action will result from this inspection.Of note: Observed a break in the sanitizer line of the chemical dishwasher so 0ppm chlorine was observed after priming. Dishwasher not in use at the time of inspection. Also observed the bar 3 comp sink quat dispenser empty so no quat was observed in the sanitize compartment. No dishes observed in the area. PIC replace the sanitizer. PIC placed a work order on both units at the time of inspection. Discussed the important of regularly checking sanitizer levels to ensure safe and effective levels are being maintained.Reviewed proper ice bath setup with PIC.
