In reach-in drawer, observed one raw shelled egg sitting directly on top of sealed/closed package of ham slices. No visible contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

PIC stated the patties had been in the cooler for about 3 hours and voluntarily discarded the beef patties. The cooler will not be used until it is able to maintain an ambient temperature of 41*F or below. Alternate nearby coolers are available to continue normal operations.
