Quaternary mechanical warewashing equipment shall have sanitizing solution level between 150-400ppm to adequately clean food contact surfaces. The dishwasher was primed to get the sanitizer to adequate levels. Discussed with Person In Charge about monitoring sanitizing solution levels of mechanical warewashing machine with staff.
