Observed several items on clean dish rack (onion dicer, tomato, slicer, tongs, plastic containers, etc) with visible grease and food residue on food contact surfaces. Person in charge had staff remove items from rack and place in 3-compartment sink for proper washing, rinsing and sanitizing. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. Observed onion dicer on clean rack where dishes are stored, with food residue on blade and deteriorating black molding, with pieces breaking off. Plastic sliding doors on ice machine with jagged cracks, causing equipment to surface to be rough and not easily cleanable. Person in charge stated order was placed for doors and new dicer and removed items from use. Employee observed picking up fallen food off the floor to put in trash can, then proceeded to changing gloves before heading back to the cook line. Inspector advised employee to wash hands before putting new gloves on. Employee removed gloves, properly washed hands and put on new clean gloves. Per FDA Food Code 2017, food employees must wash their hands after any activity which may result in contamination of the hands this includes handling raw meats, touching bare human body parts (except arms), coughing or sneezing, using the toilet, and handling dirty equipment or utensils. Switching gloves only is not sufficient. Corrected at time of inspection.

The ambient temperature of the unit was 46*F according to inspectors min/max (after 25min) and this temperature was confirmed with a refrigerator thermometer inside the unit. Per PIC, all items were stocked roughly an hour prior to this inspection in preparation for the lunch rush. PIC created an ice bath for products and placed a work order for the unit. PIC stated that they will closely monitor the ambient temperature of the unit and continue to use ice baths for products stored on the top half of the unit. Items that were stored in the bottom half of the unit were returned to the walk-in cooler which had an ambient temperature of 38*F. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Correct By: Corrected At Time Of Inspection
