#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food items being held in reach-in refrigeration unit with an internal temperature of 51*F. Internal temperature of food items registered with an internal probe thermometer. Per PIC all TCS food items have been in unit for more than 4hrs. TCS food items included gallons of milk and whipped butter cups. All TCS foods improperly cold held were discarded by PIC at time of inspection. At time of inspection, observed several large carboard containers on the upper tiers of unit blocking airflow to the lower tiers where TCS food was being held. Educated PIC on proper stocking to allow for adequate cold air flow throughout the unit, PIC had unit reorganized at time of inspection to facilitate adequate airflow. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
