Observed person in charge wearing gloves to use towel that had been continuously used to wipe face and bare hands. Person in charge (PIC) then went to prep food and handle RTE foods. Hands must be washed at any time contamination occurs and when changing tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed many TCS food items in prep fridge to be above 41*F. Person in charge stated all items had been in the unit overnight and unsure when the food got out of temperature. TCS foods include cut lettuce (59*F), cut tomatoes (58*F), mozzarella cheese (54*F), red and green salsa (55*F), raw sausage (51*F), cooked chicken (52*F), cooked pork (51*F), chili from can ((50*F), raw whole eggs (55*F), cheddar cheese slices (56*F), hot dogs (56*F), rice (59*F), beans (59*F). All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
