Discussed with person in charge about requirements of salsa packet machine. Machine is required to have NSF certificate, please provide certificate to continue use. If a salsa packaging machine were to be approved these steps likely will be needed (but may not be limited to): 1. An on-site assessment by plan review- assessing placement, wear and tear, potential for contamination, cleanability, and possible modifications to machine.2. The creation of a cleaning and sanitizing policy for the machine. 3. Labeling for the salsa packages would have to meet current labeling and CFR Code requirements -including name of establishment, address/phone number, ingredients, possibly date marking, etc. 4. The Department may require that the salsa being packaged be lab tested for pH to help determine if product is TCS or non-TCS.5. The Department may ask that a variance be applied for if the shelf life is extended beyond 7 days or owner wishes to keep product out of refrigeration.No County legal action will result from this inspection.No violations noted at time of inspection. Observed main walk in unit at 46*F-46.4*F ambient temperature with min/max thermometer. Inside main walk in unit all tcs foods were 47*F-50*F. Calibrated thermometers with Person In Charge (PIC). PIC voluntarily destroyed all tcs foods listed: sour cream, cream, butter, cut lettuce, cut tomatoes, agua fresca cantaloupe, agua fresca watermelon; cojita cheese. All raw foods were 47*F-50*F, temperature of the foods include: raw beef, raw pork, raw eggs. All raw foods were iced bathed to cool to 41*F.====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.

Observed individual plastic containers of cooked red salsa in cold holding unit by front register measuring at an internal temperature of 45 to 47*F. Person in charge (PIC) stated salsas have been in unit since the previous night. Salsas were also overfilled in holding container going above fill line. PIC voluntarily discarded red salsas. Discussed with PIC that salsas must be held at 41*F and below and to not overfill cold holding unit to properly maintain temperatures. Correct By: Corrected At Time Of Inspection
