Inspector's notes
Observed sliced ham, turkey, chorizo, slice cheeses (Swiss, provolone), and bacon in the drawer unit under the grill with temperatures between 46 to 55*F at time of inspection. Per chef, all items were placed in the drawer unit less than 4 hours prior to inspection except for the sliced ham and turkey which were voluntarily discarded at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Per cook, items were in temperature less than 2 hours prior to inspection. Person in charge (PIC) put all items on ice to rapid cool at time of inspection. Discussed proper cold holding with the PIC. Observed sprayer nozzle with no spout that reaches the soap/rinse basins of the 3-compartment sink at time of inspection. Per person in charge (PIC), soap dispenser's water is too hot and they utilize the hose to cool off the water. Discussed with PIC about discontinuing the use of the mop sink hose for filling that sink at time of inspection. Observed hot and cold swapped on the mop sink at time of inspection. Swap hot and cold water lines & handles at the mop sink prior to next routine inspection. Add faucet with spout that reaches the soap basin prior to next routine inspection. Per chef, cooked chicken was cooked on 10/18, moved to the freezer the next day, and then was pulled out to utilize on 11/1. Employee added the 11/1 date the chicken at time of inspection. Discussed with chef about date marking. All RTE/TCS foods must be date marked after 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Discussed the importance of discarding all RTE/TCS foods after 7 days. If RTE/TCS food is prepped and then frozen, then the establishment must add a freeze date, and then add another date when the item is pulled to be utilized.
