Observed establishment vacuum sealing (ROP) marinated pork chops containing gojuchang, oils, and other seasonings in refrigerated display case labeled for customer sale. Also observed vacuum packaged frozen sausages and burger patties containing blue cheese in display freezer for customer sale packaged over 48 hours prior to inspection. Items were removed from ROP packaging at time of inspection. Establishment is not currently approved to ROP these items. Establishment is in process of having variance updated. Establishment may not conduct processes outside of approved variance until approval is obtained. Repeat violation. This is the second consecutive violation. Corrective Action: Corrected at time of inspection.

Per labeling, all items were packaged in ROP over 48 hours prior to inspection in December 2023. Observed chicken sausages containing blue cheese and pork sausage containing verde sauce in grab and go display freezer. Verde sauce contains raw peppers and spinach per PIC. The pork sausages were embargoed. Instructed PIC to remove chicken sausages were removed from ROP packaging. Also observed ROP verde sauce in back walk-in freezer. Also observed no ROP packaged raw meats with approved labeling stating "store at 41'F or less. Consume within 14 days or less from pack date" or "Store frozen. Thaw under refrigeration 41'F, cooked, and consume immediately after thawing". Correct labeling prior to re-inspection on 1/23/2024. Discussed approved variance limitations with PIC. Of note: Observed establishment to be actively dry aging raw meat products including New York steak, sirloin, ribeyes, and ham in shared walk-in cooler with other food products from start dates including: 8/30/2023, 8/9/2023, 8/23/2023 and 9/20/2023. Observed dry aging product to be stored on open metro shelving with meat in contact with metro shelving. PIC stated that most product is aged around 30 days but have made special order aged steaks for 45, 60, and 100 days. Establishment does not monitor all potential control measures for dry aging. Department is conducting further evaluation of this process.
