For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding.--- Observed cooked rice located in steam table with an internal temperature range of 108F-110F. The water in the steam table was low and the temperature of the water was 125F. Per PIC, the rice had been in the steam table for over 2 hours prior to inspection. PIC voluntarily discarded rice at time of inspection and added more hot water to the steam table. (see embargo form) All food held hot must be maintained at 135F or above at all times.
