Observed a sanitizer bucket that was testing at 0 ppm for chlorine sanitizer. The person in charge prepared a new sanitizer bucket and after testing the sanitizer it was between 50-100 parts per million for the chlorine sanitizer. Discussed with person in charge to regularly use testing strips. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Corrective Action: Corrected at time of inspection.

Observed kitchen staff grab clean tray, place on top of trash can, pick tray up and intend to store as clean in meat display cooler. When tray was picked up off of trash can, food debris was observed on bottom of tray. Employee was stopped and directed to wash, rinse, and sanitize tray before using or storing as clean.
