Observed an employee washing/rinsing/sanitizing dishware in a three-compartment sink with a Quat sanitizer concentration of >400ppm. Educated PIC that sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. PIC instructed employee to rewash all dishware in correct sanitizer concentration. Corrected at time of inspection.

Inspector's notes

Observed yogurt cubs being held in a reach-in drink refrigerator with an internal temperature of 48*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 54*F with a min/max thermometer. Per PIC all yogurt cups were placed in unit the night before. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Educated PIC that no TCS food items are to be placed in unit until unit is repaired to hold temperatures of 41*F or less. Corrected at time of inspection.

Observed facility using quat solutions in sanitizer spray bottle. When tested, solution tested <150ppm using provided test strips. Upon inspection, wall quat dispenser did not have quat in container and facility did not have any quat at time of inspection. Facility did have a chlorine sanitizer, but did not have any test strips for the sanitizer. Test strips are required for any sanitizers used with food contact surfaces. Educated PIC on how to use chlorine for sanitization per directions on sanitizer. Provide sanitizer test strips or more quat prior to re-inspection. Second consecutive. Observed a handwashing sink with no paper hand towels. When asked, PIC stated they were out of paper hand towels and they were on back order. Educated PIC that all handwashing stations require disposable hand towels for all employees to dry hands after washing. PIC was able to provide cloth hand towels for usage until delivery of paper towels. PIC provided hand drying provision for handwash sink at time of inspection. Corrected at time of inspection.

At time of inspection kitchen was found to be closed and undergoing renovation. Upon speaking with general manager, dining area is undergoing light refinishing and updating of fixtures. Updating and resurfacing of public accommodations is being conducted with like-for-like replacement of flooring, bedding, and furniture. Facility is still providing bagged snack meals for patrons consisting of packaged goods and juice. Discussed with PIC when a remodeling permit is required and provided information on how to contact plan review.
