Inspector's notes
Observed an ice machine in-use with black, slimy, organic-like matter in the back of the machine. Employee states the ice was used for customer water jugs and in cold holding. When asked, employee stated they were unaware of the last time the machine was cleaned. Educated PIC on clean-in-place procedures using hot soapy water, hot water rinse, and hot water with sanitizer. Correct prior to next routine inspection.
