Inspector's notes

Observed shallow (<4" deep) 1/3 size pans of blanched jalapeno peppers cooling at 54 degrees Fahrenheit in a reach-in cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per label and person in charge (PIC), peppers were briefly boiled and cooled less than 1 hour prior to inspection, within the parameters for proper cooling times and temperatures. PIC removed labels and moved containers to walk-in to cool rapidly - inspector verified temperatures. Corrective Action: Corrected at time of inspection.

No bags or boxes of food were unsealed beneath the leak at time of inspection. PIC stated that they have a work order in place to address the issue. PIC moved all food items underneath the leak to appropriate storage location to prevent contamination.
