Observed mechanical dishwasher utilizing chlorine-based sanitizer at both the kitchen and bar area measuring below adequate concentrations. The kitchen mechanical dishwasher measured 0ppm and the bar area dishwasher measured 25ppm. Food-contact surfaces must be properly sanitized after washing and rinsing with chlorine-based sanitizer concentrations between 50-100ppm. The manager primed both dishwashers and was able to achieve sanitizer levels between 50-100ppm at the time of inspection.
