Inspector's notes

Prep cooler at start of line with sandwich ingredients had the following TCS foods measuring an internal temperature of 48-51'F: sliced ham, sliced turkey, sliced and diced tomato, shredded cheese, feta cheese, mayo, spinach, lettuce, and uncooked bacon. Per person in charge all food had been stored in walk-in cooler overnight and placed into prep cooler <4 hours prior. Ambient air temperature of cooler measured 50.3'F with min/max thermometer. Person in charge contacted someone to service cooler and instructed staff to place all TCS items onto ice bath. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Per Regional Technologies Regional Account Executive representative, white container located outside the east side of the building contains sealed containers of both clean and dirty oil from the kitchen fryers. No key available during time of visit to open container. Per representative, the bottom of the container is solid. Both tanks inside the container also sit in a secondary containment trey. Representative unsure if there is a water connection to the glycol system. Per representative, there is no cross connection between the clean and dirty oil. Representative plans to provide photos of the inside of the container and a spec sheet of the system.Discussed the need to seal the gaps and crevices of the system, including the chase line near the hood system, using silicone. Ensure areas are smooth and easily cleanable.Visit conducted with GM Gabriel B and Supervisor RS 1266.Emailed advisory report. No County legal action will result from this inspection.
