The tomatoes were being cold held at the chill bar at the cookline. The ambient temperature of the chill bar was 45*F at time of inspection (Later observed at 41*F). PIC voluntarily discarded the tomatoes. It was determined that the tomatoes were placed at the chill bar before it was turned on or soon after. It was unclear as to how long the tomatoes were out of temperature. Please ensure that ambient temperatures of cold holding units are maintained at 41*F or below before storing TCS food items. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC.
