Repeat Violation Observed pasta salad, roast beef, cilantro cream sauce, rice, and yogurt in large 8 in plastic tubs tightly sealed in reach-in refrigerators with an internal temperature of 54-58*F. Person in charge stated foods were prepared within 1 hour of inspection and removed from containers and placed on sheet pan and separate containers in walk-in refrigerator for quick cooling. SECOND CONSECUTIVE VIOLATION 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
