Inspector's notes

In hot holding box beside cook line, sausage measured an internal temperature of 114, gravy an internal temperature of 110, and brisket an internal temperature of 110. Per cook items had been placed into box approximately 1 hour prior. Cook removed items from hot box and began reheating to 165'F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
