Inspector's notes

Observed raw salmon stored in stand alone- self contained case on sales floor with an internal temperature of 43-50*f. PIC stated salmon had been previously stocked within a few hours and pulled the product back to walk-in cooler to rapidly chill. Salmon with an internal temperature of 50*f or higher had been stocked since previous night and was discarded at time of inspection. Stand alone case was holding ambient air temperature of 50*f and PIC submitted a word order with high priority. Display case will remain empty until it is functional and holding ambient air temperature below 41*f.
