Observed high temperature dish washing machine reaching a maximum temperature of 145*f after being ran a few times. PIC, placed a service call to have dishmachine repaired. Employees will use three compartment sink, testing sanitizer with QUAT test strips to ensure they are within range. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning.
