No County legal action will result from this inspection.Discussed the variance for certified food managers. Discussed the reverse osmosis (RO) system. The drain from the filters is directly connected to the handwashing sink drainpipe. The drain line from the RO system must be indirectly connected and have at least a 1" air gap. Also, RO systems must have a backflow prevention device on the water supply line. Alternatively, the RO system can be removed and replaced with regular water filters that do not condition the water and require a tank. Emailed the backflow preventer handout.

Observed upright Avantco refrigeration unit displaying 46.7*F on temp screen. Notified Person In Charge (PIC). Inside three internal thermometers indicated unit was 47*F-55*F. Ambient temperature of the unit was 50*F-52.7*F with min/max thermometer. PIC verified all following temperatures. Inside the unit the following tcs foods were 47*F-59*F: open package of cooked hot dogs; open package of shredded cheese blend; sealed Mozzarella string cheeses. These tcs foods were discarded. Also inside the unit was 4 sealed 2% gallon milks at 43*F-45*F; sealed yogurts at 45-48*F; American Cheese slices at 45*F. All tcs food placed into freezer unit to cool to below 41*F. Verified after 30 minutes. =====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
