The PIC stated that the establishment is planning to remodel the ware wash area possibly relocating equipment and will be adding a COP washing tank. A remodel permit will need to be applied for. There is not a three compartment sink available for use to wash, rinse, and sanitize equipment and utensils due to an issue with a wall that is in severe disrepair. The PIC stated that the ware wash room has been locked for about a month and is scheduled to be repaired within the next month. The ware wash area has been locked and closed. The PIC set up a temporary three compartment sink at time of inspection. A sink with at least 3 compartments shall be provided for manually washing, rinsing, and SANITIZING EQUIPMENT and UTENSILS. Corrective Action: Corrected at time of inspection.
