Inspector's notes

In the small reach in cooler on the cook line, observed two small containers of raw beef patties with internal temperature of 68-70 degrees F. Person in charge (PIC) stated items have been in unit for about an hour. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Unit was turned off when item was placed in cooler. PIC relocated burger patties to the walk in at time of inspection to cool to 41 degrees F. PIC will wait for unit to reach 41 degrees or below prior to placing items back in the cooler. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed tomato based sauce cooling in a large container at 60F. PIC said the sauce had started cooling less than 3 hours prior. PIC moved the sauce to an ice bath with the lid off. Discussed using cooling wands. Cooling foods starting at ambient temperature or at 41F or below, must be cooled to 41F after preparing within 4 hours. Corrective Action: Corrected at time of inspection.

Romaine met time and temperature parameters for cooling, however all foods must be moved to walk-in for cooling as reach in coolers are designed to hold temperatures of 41*F and below, not cool foods that are above 41*F. Sanitizer bottle was full and connected to dishwasher, however sanitizer was not being dispensed into dishwasher. Ecolab was contacted to repair dishwasher. Until dishwasher is fixed, all glassware and dishes from the bar will be redirected to the back dish area. A re-inspection will be conducted on 8/11/23. Correct By: Correct Prior To Reinspection
