Inspector's notes

Observed diced tomatoes and shredded lettuce in ice bath in kitchen at 45*F. Cold hold of food to be 41*F or cooler. As per the person in charge the tomatoes were diced approximately 1 hour prior to the inspection starting. Both lettuce and tomatoes were placed in cooler to cool to 41*F. Corrective Action: Corrected at time of inspection. Observed rice in large plastic container in walk in cooler at 55-60*F. Cold hold of food to be 41*F or lower. As per the person in charge the rice was prepared more than 6 hours prior to the inspection starting. Ice was embargoed and discarded. Advised staff to monitor and check food using a metal stem thermometer. Corrective Action: Corrected at time of inspection.
