Dish machine in main kitchen as well at bar measured at 0ppm chlorine sanitizer. Machines should measure at 50-110ppm chlorine. Person in charge had repair person on site at time of inspection. Establishment will utilize three compartment sink with quat sanitizer until machines are repaired. Corrective Action: Corrected at time of inspection.

Calibrated inspector's Thermapen and min/max thermometer along with establishment's thermometers in ice water at 32*F. Observed cut lettuce in reach in cooler in plastic containers with internal temperature measured to be 47-52*F. Per Person In Charge items have been in unit overnight, and unit temperature was not checked today. PIC removed to voluntarily discard, see embargo. PIC called for repair, establishment has adequate alternate coolers holding proper temperature to use until unit can hold 41*F or below. Correct By: Corrected At Time Of Inspection
