3-304.12 - Core: In-Use Utensils, Between-Use Storage Predefined Comment: In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Knife was removed and cleaned. Person in charge explained proper storage with staff. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed portioned mac and cheese at cold hold prep table and in walk in cooler at 60*F. As per the chef, the mac and cheese was being cooled at approximately 10:30 am. Mac and cheese was placed in cooler to cool and then portioned into smaller containers for easy services. At 6 hrs product had not cooled to 41*F. Food is to be cooled from 135*F - 70*F in 2 hours and then cooled from 70 - 41*F within an additional 4 hours. Not to exceed a total of 6 hours. Product was embargoed and discarded. Corrective Action: Corrected at time of inspection.
