Observed 2 large pans of cooked beans in the refrigerator with a date mark of 10/20/25 and an internal temperature of 51 degrees Fahrenheit. Per person in charge the items were cooked around 4pm the day prior to inspection and then left in the refrigerator to cool. All items must be cooled to 41 degrees Fahrenheit or lower within a total time of 6 hours. Reviewed proper cooling methods with person in charge. Observed a 6 inch tray of cooked beans, and a 6 inch tray of cooked carne asada, in the walk in refrigerator registering an internal temperature of 50°F. Per manager, the food had been cooked the previous day and held in the walk in refrigerator over night. The establishment shall cool the cooked beans and carne asada from 135°F to 70°F within 2 hours and from 70°F to 41°F within an additional 4 hours. In addition, the establishment shall cold hold cooked items at or below 41°F for no longer than 7 days. The manager voluntarily discarded both trays of food during time of inspection.
