Inspector's notes

Observed dishwasher with chlorine sanitizer measuring at 0 PPM after several cycles. No dishes had been cleaned with this machine today. Staff to test the sanitizer strength on the first cycle of dishes, when used. The manager placed a work order at the time of inspection. The third-party servicer is scheduled to arrive today to fix the main dishwasher. Staff plan to use the 3-compartment sink to sanitize dishes until the unit is serviced. Reviewed sanitizer concentration requirements and best practices. Corrective Action: Corrected at time of inspection.

Observed black organic material build up on the top trays of the commercial ice machine. Informed manager about the organic build up and educated on cleaning frequency. Manager informed staff not to use ice from the machine until the unit is cleaned. Manager started to defrost the unit and plans to clean it at close. PIC called maintenance, at time of inspection to request the hole be tarped decrease the risk of particles from the attic falling into the kitchen.
