Inspector's notes

Observed a quat sanitizer being used to sanitize dishware in the 3-compartment sink with a concentration of >500ppm. Educated PIC that quat sanitizer must be used in concentrations of 150-400ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. PIC rewashed all dishware contaminated by toxic sanitizer at time of inspection. Corrected at time of inspection.
