Inspector's notes
Observed multiple containers of blanched fries with internal temperatures ranging from 45°F-55°F in walk-in cooler. Per person in charge (PIC), fries were prepared yesterday morning and placed in walk-in cooler to complete cooling cooling process After discussion with PIC, it was determined fries were covered before reaching an internal temperature of 41°F. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
