Sausage internal temperature of 54*F and pizza sauce at 52*F found in three door prep refrigeration unit at time of inspection. Discussed with operator time/temperature control for safety (TCS) food items shall be kept at 41*F or below. TCS food items were removed from unit at time of inspection and technician was called for repairs. Final ambient temperature for unit verified at 41*F or below. Corrective Action: Corrected at time of inspection.
