Observed tongs for the hot holding case stored on the counter, and in use for a couple hours. No timestamp/marking to show how many hours it is left out on the countertop. Talked to staff, and set a policy to create a timer, as facility said they keep them out all day, and use from 9am-8pm. Ensure that tongs are kept hot, cold, or out for no more than 4 hours and timestamp to keep track of that system. Corrective Action: Corrected at time of inspection.

Observed the end of a spray arm, faucet or its attachment extends below the flood rim of the sink, at the 3 compartment sink in the deli small room. Manager was able to correct and move faucet to be permanently above the flood rim. Ensure that the end of the faucet is always under all circumstances at least 1 inch above the flood rim level of all sinks. Corrective Action: Corrected at time of inspection.
