Observed 0ppm chlorine sanitizer in the 3 comp sink sanitize compartment. PIC stated chlorine sanitizer was in use. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm chlorine). PIC added additional chlorine to the compartment at the time of inspection. Observed cooling cut cabbage in large plastic tubs, covered and stacked in the walk in cooler. Observed internal temperatures ranging form 46-48*F with a probe thermometer. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed multiple packages raw chopped tuna in ROP packaging in the walk in cooler at 50*F when measured with a probe thermometer. PIC stated the tuna was thawed in running water less than 30 minute prior. Also observed a ROP bag of plant-based "steak" thawing on the wire rack above the 3 comp sink at room temperatures. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. Advised PIC they must add proper backflow, remove the filtration system, or remove the acidifying elements of the filter prior to re-inspection on 4/20/2026.
