Observed the caulking surrounding the deli 3 comp sink in disrepair with a a black organic growth on portions of the caulking.Advised PIC to removed old caulk, remove organic growth and restore caulking. Non-food contact surfaces must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

In the deli cold case, observed various sealed and opened chubs of deli meats and cheeses with an internally probed range of 44-51*F. Observed all chubs of meat and blocks of cheese with the lowest observed internal temperature at the thickest part at 46*F. Observed an ambient air temperature of 50*F on the left side of the case and 40*F on the right side of the case where deli salads were held. Observed the deli salads in the right of the cooler holding at 41*F or below. Per PIC, the meat and cheese had been in the cooler overnight. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. The cooler was serviced at the time of inspection and foods were moved back to the deli cooler. Corrective Action: Corrected at time of inspection.

In the deli cold case, observed various sealed and opened chubs of deli meats and cheeses with an internally probed range of 44-51*F. Observed an ambient air temperature of 50*F on the left side of the case and 40*F when measured with a min/max thermometer. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC lowered the cooler temp at the time of inspection. A tech was onsite before the end of the inspection and the cooler air temperature was observed at 32*F with a min/max thermometer. Corrective Action: Corrected at time of inspection.
