Inspector's notes
Observed container of cooked chicken breast, bag of shredded lettuce, and bag of shredded cheese with internal temperatures ranging between 47°F and 52°F in bottom area of prep cooler. Verified temperatures with manager. Ambient air temperature measured 60°F. Per manager, items were placed in cooler about 1.5 hours prior. Manager moved items to walk-in cooler for rapid cooling. Discussed regularly monitoring equipment temperatures to ensure cold held TCS food items maintain internal temperature of 41°F or below. Corrective Action: Corrected at time of inspection.
