Observed dried food/crumbs on the blade of the deli slicer, the splash guard of the stand mixer, and a knife blade, which were being stored as clean according to person in charge (PIC). Discussed inspecting the slicer and other equipment after it has been washed/rinsed/sanitized to remove any food particles that may have been overlooked. Discussed the hazards of TCS foods left on equipment that is stored at room temperature. Many foodborne illness pathogens grow rapidly in the danger zone (41-135F). TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment. Equipment food contact surfaces and utensils shall be clean to sight and touch. PIC will clean the equipment. Corrective Action: Corrected at time of inspection.

Soup item-73F cooling in a tightly covered container in the walk in cooler. Employee stated that the soup had began cooling about 2 hours prior. The PIC stated that saving the soup was unnecessary and voluntarily discarded. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food.
