Observed American cheese with an internal temperature ranging 42-53*F with 7-hour time as a control sticker. Policy states a 1-hour temper then an additional 7-hour time control. All food holding at internal temperatures between 42-70*F shall be held no longer than 6 hours and have a written policy detailing process. Store manager had employee manually edit sticker to show 6 hour hold time and to reach out to district manager to provide an updated policy. 3-501.19 (A1, B2, C2-3) - Priority Foundation: Time as a Public Health Control; Documentation. Person in charge stated salads were prepared within 1.5 hours of inspection and placed in walk-in refrigerator for quick cooling. All foods actively cooling should be placed in units designated for cooling. Ambient temperature of unit was 43*F.
