Inspector's notes
Observed cooked chicken in a large metal bowl in the walk-in cooler with an internal temperature range of 45F-50F. Per PIC, the chicken was cooked, placed in walk-in cooler the day prior to inspection, and had not been removed from walk-in cooler. Discussed proper cooling with the PIC. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed tamales on the counter with internal temperature of 66 degrees Fahrenheit. Employee was unsure of how long product had been out of refrigeration. PIC had employee discard tamales at the time of inspection. TCS foods shall be held cold at 41 degrees Fahrenheit or below to prevent microbial growth. Corrective Action: Corrected at time of inspection.
