Observed bar employee with left hand sprinkle coconut chunks directly into beverage with no gloves on left hand. Notified bar employee that bare handing foods is not permitted. Bar employee will be using spoons to dispense coconut products into beverages. Notified Person In Charge (PIC). ====Wash hands per code and shall not contact exposed RTE foods with bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Observed establishment is currently using high temperature dish machine in use for tcs food contact containers and cooking sheets. Establishment sensor showed rinse at 156*F. Inspector Min/max indicated temperatures of 151*F-156*F. Notified Person In Charge (PIC). Final rinse indicated 102*F. PIC has put work order for dish machine. Establishment has set up three compartment sink. ====High temperature dish machines need to be from 160*F or above. Corrective Action: Corrected at time of inspection.

Person in charge was instructed to sanitize all utensils/equipment in their 3 compartment sink until working properly. Discussed the importance of the dish machine being able to properly sanitize everything being washed by having a temperature of at least 160*F. Reinspection will be conducted within 3 days.
