Observed main handwashing sink on the main cook line tilted to the point where the liquid pools on the left side of the sink basin. Also observed splash shield being held onto the sink with metal clamps. Repair sink splash guard, align sink so that it drains adequately, and recaulk/silicone the sink to the wall and around the splash guards. Correct prior to next routine inspection.

Observed bowls, strainer and cups in the water filled sanitizer basin of the ware washing sink. Per person in charge the sanitizer utilized should be chlorine. Upon testing the solution with color changing test strips no noticeable color change occurred representing a solution that was less than the required 50 ppm minimum chlorine solution. Person in charge added chlorine to 50-100ppm at time of inspection. Per PIC, both items were cooked in the morning about 1.5 hours prior to inspection. Both items were reheated to 165'F at the time of inspection. Discussed the importance of proper cooling methods to allow for proper cooling with the PIC. All items should be cooled in uncovered, shallow pans in the walk-in, by using an ice bath, or another effective means. Foods must be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. Correct By: Corrected At Time Of Inspection
